Probably most suitable for summer, this warm salad can be served warm or allow to cool down and serve cold in the summer. It’s refreshing, zingy and makes me stomach rumble just thinking about it!
Warm Melon Superfood Salad
I like to order new foods in my weekly shop to challenge myself ‘Masterchef’ style and see what I can create with a new ingredient. This week I bought a honeydew melon to have a play about with, and it turned out pretty damn well!
Ingredients (serves 2 as a side)
- 1/2 honeydew melon, chopped
- 2 large handfuls of spinach
- handful coriander, chopped
- handful pecan nuts, chopped
- 2 tsp coconut oil
Method
In a frying pan, heat the coconut oil until it is warm. Chuck in your melon and let it sizzle away. I cooked mine on a high-ish heat over the hob for around 5 minutes each side, leting the melon turn brown and slightly crispy. The coconut oil means it crisps up with a slightly nutty taste which works really well.
Once your melon has almost cooked, add in your spinach and coriander. Allow these to wilt and then you’re ready to serve.
To serve, sprinkle with pecan nuts! Enjoy…
You can always mix this up a little by serving with different fish or adding other nuts (hazelnuts, walnuts and almonds would also work really well!)
