Simple Pea and Pepper Salad
Want to know why I love a good salad? Firstly, it’s cheap as chips to make and you can make it from all those scraps of things you’ve got in the fridge.
Secondly, they’re obviously packed full of nutrients when done well and thirdly, you can pack them in a lunch box and eat on the go. No need to heat or faff about with microwaves, you’re good to go with just a folk.
For this little beauty I used just a lot of store cupboard ingredients I’d got lying about. What’s in it? Well, there’s a few handfuls of mixed leaf salad, a couple of diced jarred pimento peppers, olives, cucumber, capers, spring onion and a large glug of olive oil. I also added some podded peas which I blanched for a couple of minutes before hand just so they were still crunch but cooked through.
With salads this tasty, you’ll never refer to them as rabbit food ever again… Tip: Dip in a bit of sourdough bread to mop up that olive oil!
