Sea Bream with Pesto and Garlic Butter
Fresh fish is one of the most nutrient fueled foods. All types of fish have different nutritional values with oily fish being top of the tree for nutritional value, but all fish is great for you!
I filleted my fish because I’m not a massive fan of the “whole fish on a plate” sort of thing. It makes me feel a little bit icky.
So with the sea bream I decided to go a little Italian. In the morning I took some butter which I store at room temperature, and mixed it with a couple of teaspoons of Pesto, and a clove of crushed garlic. I placed this in the fridge for a couple of hours to firm up.
Once I’d filleted the first, I just spread the butter on, placed the fillets together and wrapped the fillets in tin foil. In the oven I also placed some “fennel chips” and roasted for 20 mins around gas mark 5.
Serve with some brown rice but make sure all the buttery juices from the fish is used when you put it all on the plate! It’s the best bit
