Salmon with Greens Super Salad
This recipe is very simple yet packed full of zero sugar diet goodness!!
The salmon provides ample of protein, whilst the green veg satisfy your micro nutrient needs as they are packed with essential vitamins and minerals…
1 bunch of asparagus
1 packet french beans
1 packet broad beans
1 packet spinach
1 shallot or small onion
1 red chilli
Juice 1 lemon
Black onion seeds
Himalaya Salt (or sea salt as an alternative)
250g salmon per person
The great thing about the salad is you can make it before cooking the salmon, on just 15 minutes. Leaving you time to concentrate on the salmon.
So, the salad…
Thinly chop your asparagus into string like sections. Trim the french beans and chop, and de-case the broad beans.
Bring a large pan of water to the boil. Take off the heat and blanch the asparagus for 3 minutes. Take out out and place in large colander. Then add the french beans to the water and blanch for 5 minutes. Repeat the process of taking the beans out and placing in the colander with the asparagus. Finally add the broad beans to the water for 3 minutes. Add to the other beans and drain again in the colander. When all the greens are dry, add to a large salad bowl.
Add the chopped chilli, chopped shallot, half tsp sesame oil, 2 tbsp olive oil, lemon juice, spinach, 1 tbsp sesame seeds, pinch of salt and tsp of black onion seeds.
Now the salad is done, heat a frying pan on a medium heat and add enough butter to fry your salmon. Don’t be tight, add in that butter!!
Once the butter is sizzling away, add your salmon skin side down and cook until the salmon has turned a lighter pink. This will crisp that skin right up!
Once the salmon looks like its nearly cooked, rub some salt into the top of it and flip it over to brown off the top.
Place your salad on the plate and add your salmon to that bed.
Enjoy with a nice glass or red wine!!
