Salmon Tray Bake

Ingredients (serves 2)
- Salmon fillets
- White cabbage (shredded or finely chopped)
- Tender-stem broccoli roughly chopped
- Carrots thinly sliced
- New potatoes thinly sliced
- 1 lemon (cut into wedges)
- Paprika
- Olive oil
Method
Line a baking tray with parchment paper. Add your chopped white cabbage, broccoli and carrots to the tray and spread evenly – make some they’re not piled too high as you want a nice even bake the whole way through ideally. Then add your new potatoes which you’ve thinly sliced. Place your salmon fillets on top of the lot, sprinkle with some paprika and a little salt and pepper if you wish. Bake in the oven for 20-25 minutes on gas mark 6 or 170oC in a fan.
To serve, make sure you squeeze that nice warm lemon all over the vegetables and salmon!
