Sri Lankan Breakfast
This Sri Lankan Breakfast, also known as ‘Kola Kanda’ is my personal, more European take, on a dish I tasted whilst in the country last year. It’s a dish affectionately known as the Sri Lankan porridge, and provides a really nutritious hit in a morning. The chilli helps cleanse the body and set you up for the day, with the coconut milk and spinach providing ample vitamins and minerals!

Instructions
- Boil your spinach for 5 minutes until dark green and wilted. Drain and blitz in a blender until the spinach is more of a paste.
- To a saucepan on a medium heat, add your coconut milk, water and spinach paste. Bring to a simmer and serve with chilli to taste.
