Simple Stuffed Mushrooms
After a very indulgent Christmas, I’m sat writing this recipe feeling bloated and rather sluggish. I don’t eat a lot of chocolates or sweets throughout the year but December always goes to pot. You just can’t help it so you have to go with the flow and just hope you don’t get addicted to sugar again… I can safely say I’ve managed another year – phew!
Endless simple carbs, chocolates, puddings, crisps, sweets, general over-indulgence left me waking up this morning longing for vegetables – I know, I must be strange! So I took myself off to the local supermarket which is only a stones throw from my apartment, and stocked up on veggie delights for the next few days to last me until New Year.
I did quite well, I got a whole host of colourful vegetables, ‘lazy’ spices and herbs and some little extras for all of £13. Bargain! Last week I went to a friends for dinner, and with 1/2 of the guests being vegetarian, she cooked a delightful stuffed mushroom recipe, it was so lovely infact, I tried to recreate it for here. It’s pretty simple and requires about 5 minutes of preparation… so if you’ve over indulged this holiday season, give this simple stuffed mushrooms recipe a try!
