  1. Boil 500ml of water in a kettle.
  2. In a wok, over a medium heat, add the lentils, chicken stock, crushed garlic cloves, coriander, gara masala, cumin, bay leaves and star anise. Add your water and cook on a medium heat simmer for around 25 minutes, or until the lentils are fully soaked, and water fully absorbed.
  3. You may find you need to add more water as you go along, but it will depend on the heat and intensity of your hob. If the lentils are not cooked, and there is hardly any water, add some more. The best tip is to add extra water a little at a time. Let the water soak up before you add any more, as we don’t want to drain the lentils at the end. They should have soaked up all the water to retain the flavour.
  4. Enjoy with meat or as a quick, nutritious lunchtime snack.
