Posh Bacon Sarnies
Who doesn’t love a bacon sarnie!? I find them quite nostalgic, a reminder of summer holidays with the family when we’d wake up in a tent or caravan to the smell of bacon cooking on the gas hob. This version doesn’t need one thing though… ketchup. Ketchup is SOOO high in sugar but admittedly does make the sandwich taste great. So, I decided to take some inspiration from a few different books to come up with this slightly healthier, definitely tastier ‘posh’ bacon sarnie.

Ingredients
- 1 whole-flour pitta
- 3 rashes smokey streaked bacon
- 1 spring onion
- 1 tsp cumin
- pinch chilli flakes
- olive oil
- 1 tbsp Greek Yoghurt
- sprg chopped fresh coriander

Instructions
- Cut your bacon into strips and place in a frying pan over medium heat with the oil, chilli, cumin and chopped spring onion.
- Cook until crispy - this should take around 10-15 minutes.
- Warm up your pitta in a microwave or toaster. Fill and serve with a dollop of greek yoghurt and leaves off the sprig of coriander. Ta da!
