But fear not, lunch boxes don’t need to be dull any longer! Introducing, the pomegranate salad…
An easy lunch box salad which looks so good you can’t resist, this salad is based on one key ingredient; you guessed it, pomegranate! Pomegranates are pretty cheap fruits if you buy them whole and get the seeds out yourself. Yes it’s a bit of a nuisance but I’d rather save the money. Plus, there’s enough seeds in there to make at least 4 salads.
Did you know? Pomegranate seeds are great sources of dietary fibre and vitamins C and K. They’re also great little fighters of bacteria so when the office cold surfaces in Autumn and Winter, they’re a great addition to your daily diet!
Psst, another great tip- I take my lunch to work in a Kilner jar. It’s a great portion control and fits plenty in, plus, its seal means the dressing stays in the pot, unlike when you use cheap Tupperware!
