Persian Courgetti
This really easy persian courgetti recipe is perfect when you want something that’s not heavy on the carbs nor will leave you feeling stodgy. It’s a great accompaniment to fish or fishcakes and takes just 15 minutes to prepare and make. Not only that, it’s really cheap to make too at less than £1 per serve!

Instructions
- Spiralise or use a peeler to cut your courgette into very thin, spaghetti like ribbons.
- Heat your oil in a frying pan and add the courgette. Then add your sumac and lemon juice.
- Cook on a medium heat for 10 minutes or until soft and browned.
- Serve with sea salt.
