Homemade Sausage Rolls
My guilty pleasure has never been chocolate or sweet desserts, it’s savoury. I LOVE a good pasty or sausage roll, but you just can’t beat homemade sausage rolls can you? In this version, I’ve added one very Christmassy ingredient… Cranberries.
Cranberries raw and fresh are actually really sour. However once you cook them, they turn really sweet and delicious. It’s bizarre how just a few minutes in the oven can transform these little berries and while they always go down well with turkey, they also go pretty well with sausage meat… who knew!?
These simple recipe is one that anyone can follow… no excuses for shop-bought sausage rolls again!

- 1 sheet puff pastry (one pack)
- 650 g quality sausage meat (good quality sausages will work too)
- 100 g fresh cranberries
- 1 egg
- salt and pepper
- Set your oven to 180oC or gas mark 7. Take your sausage meat (or split open your sausages and take out the meat) and place in a mixing bowl.
- Chop your cranberries into thin slices. Add them to the mixing bowl and bind.
- Roll or lay out your pastry. Take your sausage meat mix and place down the centre of the pastry, forming one long line.
- Roll your pastry to form one long sausage roll, and chop into 6 rolls.
- Place on a greased baking tray on baking paper. Crack an egg into a seperate bowl and whisk round slightly. Take your pastry brush and brush all the rolls with the egg wash.
- Bake for approximately 25 minutes until golden brown.
