Homemade Meatballs Recipe
Try this homemade meatballs recipe for an Italian inspired treat this winter. They’re cheap and nutritious, and you can add as much flavour as you want. Using puy lentils to pad out the meat, this is also a great recipe for families on a budget not wanting to sacrifice hearty meals in winter.

Ingredients
- 250 g cooked puy lentils
- 500 g low fat minced beef
- 2 cans chopped tomatoes
- salt and pepper
- 2 tbsp grated parmesan
- 2 tsp italian herbs
- 2 tbsp olive oil

- Set your oven to 180oC or gas mark 4.
- In a mixing bowl, add your cooked lentils, minced beef and olive oil. Mix together and add the salt and pepper to season and Italian herbs.
- In a casserole dish, add your chopped tomatoes.
- To make the meetballs, take a small handful of your beef and lentils mixture and squash and roll into balls. Place them in the casserole dish and spoon a little of the chopped tomato juice on top. Do this until all the mixture is in the casserole dish.
- Cook for approximately 1 hour. This recipe also works in the slow cooker, just do the exact same recipe but instead of using a casserole dish, use your slow cooker.
- Serve with some Parmesan cheese and wilted spinach.
