  1. In a paella dish (or frying pan if you don’t have a dish), add your olive oil and heat. Once the oil is warm, add the rice and mix well, ensuring the rice is covered in the oil. Then, add the seasoning. Leave for 2-3 minutes to warm and mix.
  2. Add around 500ml of water and turn the heat to a low simmer. Add your anchovy sauce, chopped red and green peppers, crushed garlic, salt and chorizo. Lay your fish on the top of the water and rice and allow to cook with the rice.
  3. Once the rice has absorbed the 500ml water, keep adding more in slowly, allowing it to soak up. The rice should take most of the water to cook, but if you do add too much that’s ok – you can just wait for it to evaporate. You’ll know the rice is cooked as it will go plump and fluffy. If you’re not sure though, just taste it! If it’s hard, keep cooking until it’s soft.
  4. Wait for all the water to evaporate off (you shouldn’t need to drain it). Serve with a little salt and pepper if needed, and a nice glass of white wine.
