I’ve never been a huge cauliflower fan. That lingering taste in your mouth after you’ve eaten it used to really put me off… plus it does tend to smell the house out slightly. I’m not really selling this well am I? Well, all that changed when I quit sugar a few years ago. I now use cauliflower as an alternative to rice, as well as for pizza bases, I ferment it for quick salads, and use it raw too.
This cauliflower salad takes no more than ten minutes to prepare and is super tasty and packed with nutrients. It’s great for the work lunch box and you can make a batch of it to keep in the fridge over the course of a few days, and just put it with many different dishes.
