A Scandinavian recipe for Beetroot soup, which is low sugar and packed full of goodness. Look at that colour!
It’s punchy and rich and served with a wedge of sourdough bread, makes an excellent meal all by itself. I make batches of this soup to store in the freezer and take to work. It makes the kitchens smell incredible!
The original recipe was with the herb marjoram but as I struggled to find it fresh in my local supermarket, I used thyme instead. Feel free to play about with the flavours – it makes the process much more fun!
