Apple Cinnamon Cake
Winter, for me, is all about comfort food. It’s about spices and smells and sweet treats. Hey, if we’re in for a winter of snow and frost, we need a couple of extra pounds to keep us warm! Well, that’s my excuse at least. This apple cinnamon cake will tick all the boxes this winter.
This recipe is a simple “4,4,4,2” as my mum calls it, which works for a lot of my recipes. That basic sponge is the basis for so many flavour combinations and ideas, you can pretty much create any cake, muffin or cupcake from that recipe and just add your own inspirations to the mix.
Perfect with a little mulled wine…

- 110 g self raising flour
- 110 g caster sugar
- 110 g margarine
- 2 free range eggs
- 1/2 apple
- 1/2 tsp cinnamon
- 1/2 orange
- 2 tbsp icing sugar
- Set your oven to 180oC or gas mark 4.
- In a mixing bowl, add your margarine and caster sugar and mix until they bind together. Then add your flour and eggs and mix until smooth. You may need just a tbsp or so of milk if the mixture is slightly too stiff.
- Peel and dice 1/2 an apple (red, green or cooking) and add to the mixture. Add 1/2 tsp of cinnamon and mix well.
- Line your loaf tin with baking paper. Spoon in the mixture and place in the oven for approximately 20-25 minutes. This will slightly depend on your oven. When finished, the loafs should be slightly golden on top and you could stick a skewer through and it come out clean. If there is still mixture on the skewer, it needs a little longer!
- Set aside to cool.
- To make the drizzle add your 2 tbsp of icing sugar to a small bowl, add a couple of drops of water and mix until you get smooth icing. Then squeeze the juice of 1/2 an orange and mix. Drizzle over the loaf and leave to infuse whilst it cools.
- Serve with mulled wine or a festive cider.
