Mulled Wine Chicken Stew
Mulled wine chicken stew is THE BEST slow cooker recipe you’ll find this winter… trust me! It’s zesty, strong, spicy and packs a real punch. Serve with sourdough bread or gluten free dumplings depending on how much time you’ve got to cook.
I can’t tell you how good this stew was when I got back from work after a cold, wet, miserable day in the office. As much as I love my day job, sometimes you just want to be snuggled up in a duvet on the sofa watching friends and this day was most definitely a duvet day!
Ingredients (serves 4)
- 4 chicken breasts chopped
- 3 tablespoons olive oil
- 2 large onions chopped
- packet smoked bacon chopped
- peel of 2 oranges (optional – leave out if you don’t like oranges as they can be strong when cooked)
- 2 bay leaves
- 3 garlic cloves
- 2 tbsp almond flour
- 300ml chicken stock
Method
I cooked this in the slow cooker but it would work equally well in a casserole dish or on the hob. For the slow cooker simply heat the oil in the slow cooker (this will depend on your slow cooker requirements – some you can heat on the hob, others you just have to whack everything in). Once you’ve heated (or not) the oil, just add all your ingredients and give it a good stir. Once your confident it’s well mixed, set the timer as appropriate (I cooked mine on low for around 9 hours as I leave it on whilst I’m at work), and leave the slow cooker to work it’s magic.
There’s NO better smell than walking in to a fully cooked meal and being able to just serve it up and chill out after a day at work. Serve with butter and sourdough bread for the ultimate comfort food fix!
