Minced turkey wraps with quinoa is a high-protein meal which doesn’t take long to cook – 20 minutes max. It’s a great meal for people wanting to up their protein intake or looking for low-carb alternative meals.
High Protein Minced Turkey Wraps
- 300g minced turkey
- 2 tsp olive oil
- tin kidney beans
- 1 red pepper
- 5 spring onions
- 2 tsp chinese 5 spice
- lettuce leaves
- sesame oil
In a frying pan, add the mince meat, olive oil, beans, chopped red pepper, chopped spring onions and chinese five spice. On a low heat, simmer the meat and ingredients until they’re cooked through. Meanwhile in a pan boil water and add your quinoa. This shouldn’t take more than 15 minutes or so to cook. A sure fire way of telling if it’s cooked or not is that it will change colour. The quinoa will change from a yellow colour to see-through with a white outline. Once the quinoa is cooked, drain the water and drizzle the quinoa with sesame oil and a little lemon juice.
Did you know? Quinoa is actually a seed, not a grain. Hence why it’s high in protein! The beans and lean minced turkey also provide a very high amount of protein in this meal. It’s a meal that will certainly fill you up!
Back to the wraps… Once the turkey is cooked through, spoon the mixture into lettuce leaves to serve. I used a romaine lettuce, but any lettuce will do.
Season with a little salt and pepper and serve.
