I do most of the cooking in our house of course. I’m usually stuffed full of inspiration when it comes to dinner/tea dishes… salmon, pork, cassaroles, lamb kebabs… I’ve got a little catalogue in my head when it comes to this. However, when you’re looking for lunchbox friendly ideas to take to work, I can often come rather stuck! It’s not that I have less inspiration per say, it’s more the fact that the lunchbox you take to work has to be cooked or can be warmed up in the staff microwave (which is usually broken or not working…) and isn’t messy or smelly to eat either!
So after saying that, the usual choice for work is the trusty salad! It’s versatile, healthy, nutritional and can actually be quite exciting.
Saying that, you do sometimes need a little help! Introducing… the trusty olive!
I was recently sent a cluster of the new ‘Snack ‘n Olive’ range from trusted brand Fragata. Most of you will probably have seen Fragata’s products if you haven’t seen these pockets. They also do antipasti jars such as roasted peppers, tomatoes, capers, etc.
These little olive packets however are SO useful for adding a little flavour and body to a salad, that myself and my partner have started taking packets to work to add to the salad, or nibble on throughout the day to keep up going until the evening meal. There’s loads of flavours available (just checkout their website!) and are sold by most big supermarkets now at a very reasonable price.
So if you wanted a way to make your lunchbox more exciting and add some extra nutrition too… there’s your answer!

Ps, don’t forget, olives and olive oil are a great way to add some fat into your salad. Most vegetables need fat present when you eat them to be able to make use of all the nutrients they hold, so fat is VERY important when eating a salad! Don’t forget that next time you’re prepping…
