Kippers and Asparagus
Another quick, easy and tasty meal for you – ideal for a little show-stopping dinner party main or starter too!
I bought the really easy ‘boil in the bag’ kippers from Tescos (cost me £1!!), but you can easily poach them using the similar technique.
Take your asparagus, cover in a little olive oil, and roast in the oven for around 15 minutes on gas mark 6.
Take a pan of boiling hot water, and add your kippers (in the bag if this is stated on the packet), into the boiling hot pan – they take around 15 minutes to poach.
Lastly, have a pan boiling on the heat while you cook the fish and asparagus. When 10 minutes have passed, turn off the boiling pan with nothing in it, and crack an egg into the pot. Leave the egg for 5 minutes and it will have poached with a runny centre. Into the pan I usually add a little salt and pepper to flavour the egg as it poaches.
Take your asparagus out the oven, and place it on your plate to form a little bed. Take your kippers out the bag (be careful!) and place on the bed. Lastly, take your poached egg out of the pan, drain and add to the top. Season with some salt, pepper and lemon-grass, and add a fancy dash of olive oil to serve.
The cost of this meal was around £1.75 per head. It’s ridiculously nutritious and tasty – for those wanting to know where I got the ingredients, you can pick up asparagus for next to nothing at large supermarkets or get it from your local greengrocer if you’re lucky enough to have one! The kippers are also available for around £1 at your local supermarket, and I got the eggs from my two pet ducks in the garden – truly organic and fresh!
