Healthy Eating on a Budget
After getting tired of reading about how eating healthily is expensive, I’ve set myself a challenge throughout March. I have a total of £100 to last me the month for food, in order to prove you can do healthy eating on a budget.
As I cook for 2 people, I’ve set a budget of £25 per head per week (£100 each for the month) so you might notice most of my recipes, if you’re cooking for one person, will last you for two meals rather than one. If you’re following along, you might just have to do a little experimenting with portion sizes as it will depend on how much exercise you do, etc as to how much you need to eat. Remember, if you make double or enough to use up all the ingredients you’ve bought in, just freeze the leftovers for a later date!
So, with that, may the experiment begin! I’ve listed below what I will be cooking on the first week of the experiment; I’ve also put the approximate cost per head next to the meal. I’ll be listed key nutritional information on the recipes when they’re completed too. Prices are based on a weekly shop at Morrisons with home brand or non brand items. Wish me luck!
Monday
Breakfast – Apple with peanut butter (52p per head)
Lunch – Onion soup (£1.05 per head)
Dinner – Brown rice with chickpeas, pomegranate and mint salsa (£1.37 per head)
Tuesday
Breakfast – 2 boiled eggs (30p per head)
Lunch – Onion soup (£1.05 per head)
Dinner – Roast chicken dinner (£2.85 per head)
Wednesday
Breakfast – Blueberries and greek yoghurt (£1.20 per head)
Lunch – Chicken soup (47p per head)
Dinner – Peppered mackerels with roast peppers (£1.90 per head)
Thursday
Breakfast – 2 boiled eggs (30p per head)
Lunch – Chicken soup (47p per head)
Dinner – Salmon with sweet potato and asparagus (£3.40 per head)
Friday
Breakfast – Apple and peanut butter (52 per head)
Lunch – rice noodles with carrots and cashews (80p per head)
Dinner – Cauliflower salad (80p per head)
Saturday
Breakfast – Porridge with any leftover fruit (54p per head)
Lunch – Peppered mackerel with roast carrots (£1.30 per head)
Dinner – Bean casserole (£1.42 per head)
Sunday
Breakfast – boiled or poached eggs with any leftover veg (approx 30p per head depending on leftovers used)
Lunch – Leftover bean casserole (£1.42 per head)
Dinner – Griddled halloumi salad (£1.04 per head)
Total cost = £23.02 per head for the week.
TOP TIP: Check out the frozen vegetables to save some extra money during the week.
