
I design my recipes using a variety of techniques. I eat out at different restaurants relatively often, and when I go on holiday I will always try to eat at local places rather than tourist places. That, coupled with my love for flavour and finding myself on a constant quest of flavourful food, means one of my favourite parts of cooking is actually the design stage.
Last Christmas I was also bought this brilliant reference book, called the flavours thesaurus by Niki Segnit. The book is not designed to be a complete “how to” book but rather a fantastic guide for inspiration when you’ve got some ingredients you don’t know what to do with.
Lastly, I always carry around a little notepad or my phone so whenever I eat out or walk past an interesting menu, I can jot down a few ideas should inspiration hit me…
I think as long as you’ve got a herb garden full of fresh herbs, a well stocked spice cupboard and a pestle and mortar, you can’t really go wrong!
